Uzvar: traditional Ukrainian fruit beverage
Craving something tasty to drink on a gloomy winter’s day? Try uzvar — a traditional Ukrainian non-alcoholic beverage made of dried fruits. Its name is a derivative from the Ukrainian word “zavaryty”, meaning “brew, boil”. It has been mentioned in old books and monastery chronicles since the old days.
This sweet beverage is an essential part of the traditional festive menu for Christmas dinner. It is served hot or cold, with or without honey or sugar.
Ingredients:
Dried apples, pears, plums, etc. to your liking — 350 g
Water — 3 liters
Sugar or honey
Raisins, rosemary optional
Bring water to the boil and add a generous amount of dried fruit. Let it simmer for a couple of minutes. Turn the stove off and put the lid on. Add the sugar or honey in 15–20 minutes.
