
Tradicionalna ukrajinska uskrsna paska je slatki kruh s kvascem. Ali za one koji ne vole dugo kuhati, prikladna je ukusna i slatka paska od sira. Nazivaju je još i kneževska ili kneginjina. Ne treba pečenje. A u sastavu nema brašna. Tradicionalno se ova paska izrađuje u obliku piramide bez oštrog vrha. Ali poslužit će bilo koji kalup za sir (važno je da kalup ima otvore).
Sastojci:
- Svježi sir (5-9% masnoće) 500 g
- Žumanjci 3 kom
- Šećer 100 g
- Maslac 50 g
- Prstohvat soli
- Mlijeko ili vrhnje 100 ml
Priprema:
- Svježi sir temeljito izmiksajte štapnim mikserom i pomiješajte sa žumanjcima, šećerom, soli, mlijekom i mekanim maslacem. Sirnu smjesu uz stalno miješanje dovedite do vrenja. Po želji možete dodati kandirano voće i orahe. Ostavite da se ohladi na sobnu temperaturu.
- Kalup obložite vlažnom gazom u nekoliko slojeva. Stavite sirnu smjesu. Na vrh kalupa stavite uteg (staklenku s vodom) i stavite pasku u hladnjak. Nakon 10-12 sati pažljivo izvadite pasku iz kalupa i ukrasite po želji. Dobro se slaže s rastopljenom čokoladom.

Syrna Paska (Sweet Cheese Easter Dessert)
Traditional Ukrainian Easter paska is a sweet yeast bread. But for those who don’t like to cook for a long time, a delicious and sweet paska made from cheese is a great option. It is also called “knjazha” or “knjazivna” paska. It doesn’t require baking, and there’s no flour in it. Traditionally, this paska is made in the shape of a pyramid without a sharp top. But any cheese mold will work (it’s important that the mold has holes).
Ingredients:
- Cottage cheese, 5-9% fat 500 g
- Eggs, yolks 3 pcs
- Sugar 100 g
- Butter 50 g
- Pinch of salt
- Milk or cream 100 ml
Preparation:
- Thoroughly blend the cottage cheese with a blender and mix with the yolks, sugar, salt, milk, and softened butter. Bring the cheese mixture to a boil, stirring constantly. If desired, you can add candied fruits and nuts. Let it cool to room temperature.
- Line the mold with several layers of damp cheesecloth. Place the cheese mixture inside. Put a weight (a jar of water) on top of the mold and place the paska in the refrigerator. After 10-12 hours, carefully remove the paska from the mold and decorate as desired. It tastes great with melted chocolate.
