Vrućeg ljetnog dana želite se zaroniti u hladno more ili se sakriti od sunca u gustoj hladovini. A što ako se pokušate ohladiti i ručkom? Hladne juhe mogu biti izvrsno rješenje. Jeste li već probali okrošku? Predstavljamo holodnik – još jedan recept za hranjiv i zdrav, hladan ručak.
Sastojci:
- Kuhana cikla 1 kom
- Kokošje jaje 2 kom
- Svježi krastavac 1 kom
- Rotkvice 5-7 kom
- Zeleniš (kopar, peršin) po želji
- Kefir (ili sirutka i kiselo vrhnje) 500-700 ml
- Češnjak 1 režanj
- Sol i papar po ukusu
Priprema:
- Jaja skuhati i oguliti, narezati. Ciklu naribati. Krastavac i rotkvice oprati i narezati na sitne kockice. Zeleniš oprati i sitno nasjeckati.
- U velikoj zdjeli ili loncu pomiješati povrće, zeleniš i jaja, preliti kefirom. Ako koristite sirutku, kiselo vrhnje možete dodati po ukusu (više kiselog vrhnja – bogatiji okus). Po želji možete dodati sitno nasjeckani češnjak, sol i papar po ukusu.
- Hladnik treba poslužiti ohlađen. Dobro se slaže s kriškom tamnog kruha i senfom.

Kholodnyk: Cold Soup
On a hot summer day, you want to dive into the cool sea or hide from the sun in dense shade. What if you try to cool down with lunch too? Cold soups can be an excellent solution. Have you already tried okroshka? We present kholodnyk – another recipe for a nutritious, healthy, and refreshing lunch.
Ingredients:
- Boiled beetroot 1 pc
- Chicken egg 2 pcs
- Fresh cucumber 1 pc
- Radishes 5-7 pcs
- Greens (dill, parsley) optional
- Kefir (or whey and sour cream) 500-700 ml
- Garlic 1 clove
- Salt and pepper to taste
Preparation:
- Boil and peel the eggs, then chop them. Grate the beetroot. Wash and finely dice the cucumber and radishes. Wash and finely chop the greens.
- In a large bowl or pot, combine the vegetables, greens, and eggs, then pour in the kefir. If using whey, sour cream can be added to taste (more sour cream means a richer flavor). Optionally, you can add finely chopped garlic, salt, and pepper to taste.
- Kholodnyk should be served chilled. It pairs well with a slice of dark bread and mustard.
