Zrele crvene rajčice – gastronomski užitak i izuzetna korist za zdravlje. Antioksidansi, vitamini, vlakna čine rajčice nezamjenjivima u prehrani. A sok od rajčice, kao pitki koncentrat svih tih korisnih tvari, sastavni je dio zdrave prehrane. Redovita konzumacija sirovih i obrađenih rajčica regulira probavu, smanjuje rizik od kardiovaskularnih i onkoloških bolesti, poboljšava stanje kože i kostiju, te podržava zdravlje očiju.
U Hrvatskoj je naša obitelj bila iznenađena što se u restoranima izuzetno rijetko može naručiti sok od rajčice. Jer tako dobro ide uz pizzu i morske plodove. Osim toga, u Ukrajini postoji duga tradicija čuvanja soka od rajčice za zimu. Može se piti, dodavati jelima poput boršča. U soku od rajčice se može marinirati roštilj šašlik, ili se mogu dinstati punjene paprike s dodatkom soka. Stoga vam nudimo recept za domaći sok od rajčice koji se može čuvati do 10 mjeseci.

Priprema:
Rajčice treba oprati i provjeriti da nema truleži. Rajčice narežite na male komadiće i propustite kroz sokovnik. Na svaku litru dobivenog soka dodajte 1 čajnu žličicu soli. Nakon toga, dobivenu smjesu treba prokuhati otprilike 7-10 minuta. Tijekom kuhanja treba uklanjati pjenu s površine soka. Zanimljivo je da se dostupnost antioksidansa u rajčicama povećava toplinskom obradom.
Gotov sok razlijte u staklenke i zatvorite poklopcima. Prije toga je važno staklenke i poklopce sterilizirati, odnosno obraditi vrućom parom (poklopce možete držati u kipućoj vodi). Gotov sok od rajčice čuva se na hladnom i tamnom mjestu.

Tomato Juice: Everyday and for Winter
Ripe red tomatoes are a gastronomic delight and offer considerable health benefits. Antioxidants, vitamins, and fiber make tomatoes indispensable in the diet. And tomato juice, as a drinkable concentrate of all these beneficial substances, is an integral part of a healthy diet. Regular consumption of raw and processed tomatoes regulates digestion, reduces the risk of cardiovascular and oncological diseases, improves skin and bone health, and supports eye health.
In Croatia, our family was surprised that tomato juice is extremely rare to be offered in restaurants. After all, it tastes so good with both pizza and seafood. Furthermore, in Ukraine, there is a long tradition of preserving tomato juice for winter. It can be drunk, added to dishes like borscht, used to marinate shashlyk, or to stew stuffed peppers with added juice. So, we offer you a recipe for homemade tomato juice that can be stored for up to 10 months.
Ingredients:
- Ripe red tomatoes
- Salt
Preparation:
Wash the tomatoes thoroughly and ensure they have no rot. Cut the tomatoes into small pieces and pass them through a juicer. For every liter of juice obtained, add 1 teaspoon of salt. After this, the resulting mixture should be boiled for approximately 7-10 minutes. While boiling, remove any foam from the surface of the juice. Interestingly, the availability of antioxidants in tomatoes increases with heat treatment.
Pour the finished juice into glass jars and seal them with lids. Before this, it is important to sterilize the jars and lids, meaning to treat them with hot steam (lids can be held in boiling water). The finished tomato juice should be stored in a cool, dark place.
