Lubenica – slatki i osvježavajući ljetni koktel okusa, vitamina i mikroelemenata. U ukrajinski jezik naziv “kavun” posuđen je iz turskog. Dok u hrvatskom jeziku korijen riječi “lubenica” – praslavenski – znači koru drveta, drvo.
Lubenica se danas koristi u salatama (s fetom, šunkom), voćnim koktelima i kao samostalni desert. Mi vam pak nudimo da probate pripremiti kvas od lubenice. Kvas je tradicionalno ukrajinsko piće na bazi fermentacije. Izrađuje se od tamnog kruha, cikle, voća. Recept za kvas od lubenice “posuđen” je od popularnog ukrajinskog kuhara Klopotenka.
Sastojci:
- Lubenica 700 g
- Šećer 70 g
- Suhi kvasac 0.5 žličice
- Pitka voda 1.7 litara
Priprema:
Lubenicu narežite na komadiće i stavite u staklenku. Dodajte šećer i kvasac. Sve prelijte vodom sobne temperature i ostavite da fermentira 2 dana. Kada je piće gotovo, možete ga procijediti. Poslužite s ledom. Čuvajte u hladnjaku.

Watermelon Kvas
Watermelon is a sweet and refreshing summer cocktail of flavor, vitamins, and microelements. In the Ukrainian language, the name “kavun” was borrowed from Turkish. Meanwhile, in Croatian, the root of the word “lubenica” is Proto-Slavic and means tree bark, wood.
Watermelon is currently used in salads (with feta, ham), fruit cocktails, and as a standalone dessert. We, however, suggest you try making watermelon kvas. Kvas is a traditional Ukrainian fermented drink. It is made from dark bread, beets, or fruits. The watermelon recipe was “borrowed” from the popular Ukrainian chef Klopotenko.
Ingredients:
- Watermelon 700 g
- Sugar 70 g
- Dry yeast 0.5 teaspoon
- Drinking water 1.7 liters
Preparation:
Cut the watermelon into pieces and place them in a glass jar. Add sugar and yeast. Pour room-temperature water over everything and leave it to ferment for 2 days. Once ready, the drink can be strained. Serve with ice. Store in the refrigerator.
