Recept za ovu Ukrajinsku riblju pitu star je više od 200 godina. Hranjiva i lagana pita priprema se od slatkovodne ribe – štuke ili smuđa. Međutim, odgovara bilo koja riba s malim brojem kostiju. Naziv pite dešifrira se kao složenac (baba) s komadićima ribe (šarpati – razdvojiti na komadiće). Probajte!
Sastojci:
Za juhu
- 2 manje ribe ili 1 velika
- Lovorov list
- Mrkva 1 kom
- Sol i papar po ukusu
- Korjenasto povrće po izboru
Za tijesto
- Pšenično brašno 200 g
- Riblja juha
- Sol i papar
- Luk 2 kom
Priprema:
Operite, očistite i narežite ribu na srednje komade. U lonac stavite ribu, mrkvu, korjenasto povrće, dodajte sol, papar i vodu. Kuhajte na srednje jakoj vatri dok riba ne bude gotova. Zatim ohladite i juhu i ribu. Ohlađene komade ribe odvojite i uklonite kosti. U tavi popržite sitno nasjeckani luk dok ne porumeni.
U brašno malo po malo ulijevajte riblju juhu, miješajući tekuće tijesto. Dodajte prženi luk, papar i sol, ponovno dobro promiješajte.
U kalup na papir za pečenje stavite komadiće ribe i prelijte ih tijestom. Pecite u pećnici na 180°C do 40 minuta. Poslužite toplo.

Baba Sharpanyna
This Ukrainian fish pie recipe is over 200 years old. This hearty and light pie is made with freshwater fish—pike or zander. However, any fish with a small number of bones will work. The name of the pie translates as a casserole (baba) with pieces of fish (sharpaty – to pull apart into pieces). Give it a try!
Ingredients:
For the Broth
- 2 small fish or 1 large one
- Bay leaf
- 1 carrot
- Salt and pepper to taste
- Root vegetables of your choice
For the Batter
- 200 g wheat flour
- Fish broth
- Salt and pepper
- 2 onions
Preparation:
Wash, clean, and cut the fish into medium pieces. Place the fish, carrot, and root vegetables in a pot, add salt, pepper, and water. Cook over medium heat until the fish is ready. Then, let both the broth and the fish cool down. Pull the cooled fish pieces apart and remove the bones. In a frying pan, fry the finely chopped onion until golden.
Gradually pour the fish broth into the flour, mixing it to form a thin batter. Add the fried onion, pepper, and salt, and mix well again.
Place the fish pieces on parchment paper in a baking dish and pour the batter over them. Bake in an oven at 180°C for up to 40 minutes. Serve warm.
