Po popularnosti slično ajvaru, ovo se jelo u Ukrajini priprema ljeti i konzervira za zimu. Zanimljiv naziv “kavijar” vjerojatno je povezan s teksturom jela. To je sezonski soté od povrća na bazi tikvica, samljeven ili usitnjen do stanja pirea.
Sastojci:
- Tikvice 3 kom
- Luk 1 kom
- Češnjak 2-3 režnja
- Mrkva 1-2 kom
- Suncokretovo ulje za prženje
- Sol, papar, sušena paprika po ukusu
- Koncentrat rajčice 2-3 žlice
Priprema:
- Tikvice operite, narežite na sitne kockice. Mrkvu naribajte, a luk sitno nasjeckajte. Povrće pirjajte na zagrijanom ulju s češnjakom i začinima.
- Nakon 15 minuta dodajte malo vode (po potrebi) i koncentrat rajčice. Pirjajte dok se potpuno ne skuha. Gotovo jelo usitnite blenderom.
- Ukusno je hladno na kriški svježeg kruha.

Zucchini Caviar
Similar in popularity to ajvar, this dish is prepared in Ukraine in summer and preserved for winter. The interesting name “caviar” is probably related to the dish’s texture. It is a seasonal vegetable sauté based on zucchini, ground or crushed to a purée consistency.
Ingredients:
- Zucchini or courgettes 3 pcs
- Onion 1 pc
- Garlic 2-3 cloves
- Carrots 1-2 pcs
- Sunflower oil for frying
- Salt, pepper, dried paprika to taste
- Tomato paste 2-3 tablespoons
Preparation:
- Wash the zucchini, cut into small cubes. Grate the carrots, and finely chop the onion. Sauté the vegetables in heated oil with garlic and seasonings.
- After 15 minutes, add a little water (if needed) and tomato paste. Simmer until fully cooked.
- Blend the finished dish with a blender until smooth. It tastes delicious cold on a slice of fresh bread.
